The Masutani Kokuryu VG10 Tsuchime (Hammered) Damascus 180mm Gyuto is a very beautiful and functional knife, at a great price point for the quality and manual labor that goes into each example. The Kokuryu line from Masutani-san is relatively new, and as with all Masutani offerings, is a great bargain for the amount of knife one gets. With the blue laminate Western style handle, and combination hammered Damascus finish, these knives have a rich tactile and visual appeal. The hammered Damascus finish on these knives is very beautiful and wouldn't be out of place on something costing significantly more. The VG10 core is able to take an extremely keen edge relatively easily and has good edge retention and corrosion resistance properties. The hard steel core is sandwiched between layers of softer stainless steel, giving the blade toughness. A nice-looking Western style one-piece blue laminate handle is comfortable and gives the knife good balance, allowing for various gripping and cutting styles. The grind is excellent, and these are laser-like blades with outstanding performance. The excellent traditional type grind will lessen the chance of foods sticking to the knife as well. Gyuto are general purpose Japanese kitchen knives, much like the Western chef's knife upon which their origins are based. The Masutani Kokuryu VG10 Tsuchime Damascus 180mm Gyuto has a laser thin spine (well below 2mm on most examples) at the midway point, yet all Masutani knives are built with rigorous use in mind. This size of blade would be a great addition to the home or pro kitchen and will be able to tackle a wide range of cutting tasks. Being capable yet compact, the Masutani Kokuryu 180mm Gyuto would be especially well suited for tighter workspaces. Master Kunio Masutani is one of the best known and well respected knifemakers in Echizen (and all of Japan). He has been making knives for decades and introduced many new techniques and technologies to the craft in Echizen, allowing for high-quality knives at extremely fair prices. This line of knives further fulfills Masutani-san's goal of affordable yet very high-quality cutlery. If asked, I can still touch up the blade before sending it out (please contact me or leave a note when ordering). In either case, the buyer will have an opportunity to have the knife sharpened for free twice in the future. Please do not put these knives in a dishwasher or cut frozen foods, bone, or other hard material. Most Japanese hand finished knives may have some minor scratches, dings, or imperfection on the blade or handle. This is normal and not out of the ordinary, especially on fully handmade knives. Boxes may have scratches, dings, perforations, etc. when shipped to me. If anything outside normal is seen as far as imperfections go (Sabi-Wabi), I will put a note at the top of the item description. The knife in the pictures is the exact make and model of knife, but not the individual example that will be shipped. There may be some minor dimensional variation, and cosmetic differences in hammering, Damascus and handle pattern, etc. It is getting somewhat impractical for me to list every knife in inventory with an individual listing, especially knives that are overall fairly consistent in dimensions and finish.
